Last week we shared Kelsey Millar’s curry recipe. Next up: Stephan Rosger. The judges called his curry “well seasoned” and “very tender.” From Stephan:
My Indian-spiced grilled chicken recipe was from a recipe book called “A Little Taste of India,” you can find it on page 34. The book also has the mango chutney recipe and the mint coriander chutney recipe.
The mango chutney is so easy I think I’ve memorized it:
3 ripe mangos
1 cup sugar
1.5 cups white vinegar
2 cinnimon sticks
1 tsp chilli powder
1 tsp grated ginger
Reset on low heat and reduce all the way down to a jam-like consistency (1-1.5hrs)
Salt and extra chilli powder to taste.
Waaaay better than the jar, and cheaper.
